Beauty and Madness Before I started DM, I spent a month experimenting and perfecting cake recipes as well as the filling and frosting that will make up a perfect cake chemistry. Oh good heavens, just like engineering units (nightmare)! Lots of variables to consider: the taste, behavior as a cake and as a cupcake, how it marries the filling, how it retains moisture, firmness, if it can hold the weight, totality of its sweetness……… gaasssp and much more. Soon I will be reaching my 100th cake (hurray!) and 99.8% of all those cakes and cupcakes is chocolate :) Yesterday, was a caterpillar ride (yeah haven’t tried rollercoaster yet): 24 VANILLA cupcakes. I just didn’t pull out my old tried and tested recipe. Bad and good news is, my palate has been even more complicated and ultimately stubborn. For months ive been eyeing a vanilla cake recipe from TLB and Artisan Cake. Yesterday, I had to do it. I picked out TLB (awesome cake recipe link on the comment). Collection time was 10 am, so I was up and running by 4 am. Smelled good, cuppies came out of the oven looking good. After 10 minutes, my heart sank. They started pulling away from the edges of the liners :( Disheartened, I still gave it a taste-test. It was really good! So I was having my breakfast by 5am :) With clock tickin’ again!?, (Im starting to feel like captain hook now!) I did another batch. Trick is I just have to overfill it slightly more than 2/3rd of the liner coz cake doesn’t grow much and it shrinks as it cools. If you are a fluffy butter-cake fan, then this is it. This is perfect for a wedding cake. Thanks to Erin of Three Little Blackbirds, her step-by-step recipe is so helpful. Sharin it to you friends to encourage home baking. Yet have to try Artisan’s recipe, will share my adventure next time. But lets keep my chocolate cake recipe off the list pls :) Happybaking! P.S.
