Best leftover makeover in recent history tonight! Rave reviews from Luke & Tim. And super quick, too! Brocoli, carrot & celery sticks, & chicken tenders were left from the birthday party over the weekend. I cut the veggie sticks smaller, added green onion & a couple handfuls of cashews & stir fried it, adding bottled Mandarin sauce (bought as a close out at Kroger this afternoon!) For the last couple of minutes, I added the leftover chicken tenders to reheat, & drizzled more sauce on top. Served with noodles. (Newly minted 8 year olds pick). He took one bite, oohed & ahhed. Took another bite, told me he gives it two thumbs up & all my fingers & toes...20...up! After the third bite, he said, if I could only eat one food for the rest of my life, or like, for 30 years atleast, I pick THIS CHICKEN, Mom! He scarfed up chicken, picked at veggies, & hardly touched the noodles. But Tim & I really enjoyed the whole dinner. :) And yes, Tim went back & cleared the shelf of said closeout Mandarin sauce before I posted this. LOL.
