Bettie De Meyer > Stuffed Eggs with Crisp Bacon Topping These ‘egg’-ceptional little treats, using our famous Bakers Bacon Flavour KIPS, are so simple to make and always an instant hit on the snack tray! Ingredients • 50 g (1/5 pack) Bakers KIPS, Bacon flavour • 4 rashers streaky bacon • 45 ml finely chopped parsley • 12 hardboiled eggs, shelled • 30 ml cream • 45 ml mayonnaise • 15 ml tomato sauce • 10 ml Worcester sauce • salt and milled black pepper Directions Chop the Bakers KIPS coarsely and set aside. Fry or grill the bacon until very crisp. Drain on kitchen paper and chop finely. In a bowl, combine the bacon, biscuits and parsley and set aside. Halve the eggs, remove the yolks and place them in a mixing bowl. Arrange the whites on a serving platter. Mash the egg yolks and add the cream, mayonnaise, tomato and Worcester sauce and season well with salt and pepper. Mix thoroughly and pipe or spoon the mixture into the egg whites. Sprinkle with the bacon topping and serve. Makes 24. PS: If you think frying only a few bacon rashers in a pan is a mission, use the microwave instead. Line a plate with paper towel. Arrange the rashers on top of the paper and cover with another sheet of paper towel. Microwave on high checking every 30 – 60 seconds until the bacon is crisp enough. Bron: Bakers.co.za
