Bhindi Besanwali Bhindi being the main veg available in summers here is another simple and yummy recipe for the bhindi. Ingredients Bhindi 300 gm Besan 4 tablespoons Onion 1 medium sliced Ajwain 3/4th tsp Zeera 3/4th teaspoon Turmeric powder 1 tsp Red chili powder 1 tsp Coriander powder 1 tbsp Anardana powder 1 tsp Amchoor powder ½ tsp Kalonji ½ tsp Kasoori methi a generous pinch Salt to taste Mustard Oil 2 tablespoons Method Wash and pat dry bhindi. Trim both the ends. Cut in 1 ½ inch pcs. Dry roast the besan in a heavy bottom based wok on simmer till it emits its unique aroma. bring to smoking point the mustard oil. Cool. Reheat and add zeera and ajwain seeds till they splutter. Add the sliced onions and sauté till translucent. Add bhindi, salt, coriander powder, turmeric powder and red chilli powder. Toss to mix and cook for 5 minutes, stirring occasionally. Add besan and mix. Add andardana powder and amchur powder mix well. Add onion seeds and kasoori methi and mix again. Cook on the simmer, stirring occasionally, till bhindi is done. Approx 10 minutes. bhindi should retain some bite. Serve hot with chapati/parontha......
