Bison is is a dark red meat. 1 it is very high in iron plus It has very little fat. This gives it a red color that should not be cooked out. If you cook it till it is completely brown it will be dry and tough. That is below the standard of what we want provide our customers. If you do not like the pink color we would suggest a different meat, like one of our Turkey burgers that is also available most days. Thank you for your understanding.
