Black bean chili. 1 tablespoon canola oil or extra virgin olive oil. 1 1/2 cups chopped onion 4 cloves garlic, chopped 2 teaspoons cumin 2 tablespoon chili powder 1/2 teaspoon dried oregano leaves 1/4 teaspoon cayenne pepper 1/2 teaspoon salt 1 cup diced red bell pepper 2 cans black beans, drained 2 cans kidney beans drained 1 1/2 cups water 3 small cans of diced tomatoes with green chilies 1 large can of crushed tomatoes. In large pot over medium heat cook onion in oil until tender about 3-4 minutes add garlic. Cumin, chili powder, oregano cayenne pepper, salt, diced pepper. In blender 1 can of black beans with ¾ cup of water on high setting for 30 seconds. Add bean mixture to the pot. Add the rest of the water ¾ cups. Add remaining whole beans unblended to the pot and stir together. Add the tomatoes. Reduce heat and simmer for 30 minutes. I put it in my crock pot and leave it on warm over night. You can add extra lean ground beef for meaty chili, or you can add Morning Star Farms veggies crumbles if you do not want to use meat but add that consistency. Always taste it to make sure it is hot enough for you, you may want to add more hot sauce or chili powder.
