Blackened Salmon with Vegetables Ingredients: -4 6 oz salmon fillets skinned -¾ teaspoon cayenne pepper -1 teaspoon dried thyme -½ teaspoon garlic salt -salt & pepper to taste -3 ½ tbsp butter -1 cup lemon juice and lemon for garnish -your choice of veggie To begin: -Preheat oven to 400 degrees -Cut assorted vegetables to your liking and place in microwave safe bowl with lid. Top with salt and pepper and 1 tsp butter cubed. Add 3 tbsp water, cover and place in microwave for 4 to 6 minutes. -Mix cayenne pepper, garlic power, thyme and salt and pepper in a small mixing bowl until combined. Transfer to plate and set aside. - In medium glass bowl, melt 2 ½ tbsp butter and add ½ lemon juice. Stir until combined. - Heat medium ovenproof pan to medium high heat and allow to get hot (I know its ready when I add a few drops of water and it bubbles). -One pan is hot, dip each piece of salmon in butter lemon mixture making sure to coat both sides. One covered, place on plate with seasoning and coat well. -Once seasoned, cook salmon until blackened, about 2 minutes on each side & transfer pan to oven for 6 to 8 minutes. -Check vegetables and heat longer if needed 1 to 3 minutes while salmon is cooking in oven. -Plate salmon with vegetables on side and squeeze/pour a little bit of lemon juice on both, and your done! I love to pair salmon with green beans and sometimes brown rice. Staple meal in our house! I also use frozen and it works great (and saves $$)! Servings:4 Price: $14 *Depending on your pantry!
