Blueberries are in abundance at the moment so I took advantage and bought 3 boxes of them, some to freeze, some to eat with yoghurt, some for jam and of course for muffins. For breakfast this morning we are having muffins straight out of the oven. BLUEBERRY MUFFINS 2 1/2 cups plain flour 2 teasp baking powder 1/2 cup of sugar 100g unsalted butter 1/4 cup golden syrup 2 eggs 1 cup milk 1 1/2 cups fresh blueberries (fozen ik to use) Sift flour with baking powder Stir in sugar Melt butter with golden syrup Lightly beat eggs with milk Pour wet ingredients into flour mixture Add blueberries and mix just enough so that ingredients are moistened 3/4 fill deep muffin tins Bake at 190c for approx 20 mins or until muffins spring back when touched. Serve dusted with icing sugar Enjoy with a cuppa FANTASTIC !
