Blueberry Banana Bread Ingredients: 3 large over-ripe bananas 2 tablespoons lemon juice 1/3 cup vanilla soy milk 1/2 cup agave nectar 2 cups white whole wheat flour (or regular whole wheat flour) 3/4 teaspoon baking powder 3/4 teaspoon baking soda 1/2 teaspoon salt 1 cup blueberries Instructions: Preheat oven to 350 degrees. Spray or wipe a 9×5-inch loaf pan with oil. Mix the soy milk with 1 tablespoon of the lemon juice and let stand until it begins to curdle. In a large bowl, mash the bananas and add the other two tablespoons of lemon juice, soymilk, and agave nectar.Stir well to combine. In a separate bowl, combine the flour, baking powder, soda, and salt. Add the dry ingredients to the moist mixture, and stir just until it is well-combined. Fold in the blueberries. Spread the mixture evenly in the prepared pan and bake until a toothpick inserted in the center comes out almost clean, about 60 minutes. Allow to cool, cut and serve.
