Boneless Leg of Lamb rubbed with a compound butter containing butter, parsley, thyme, rosemary, salt, black pepper, lemon zest, lemon juice, olive oil and garlic. Roasted at 325 for 20 minutes per lb. adorned with carrots, red potatoes, garlic and the above mentioned herbs and spices. I had to leave the potatoes in a little longer after I took the lamb out. I let the lamb rest 20 minutes. In hindsight I wouldve cooked it a little longer but it was delicious anyway.
