Boneless lechon is not bad but I still prefer the real original lechon. Nothing beats the look of a whole complete roasted pig on the table with the head, the tongue, the brain, the legs, the ribs, the tail and everything still intact. I like my lechon with the bones still in it. When you pick with your fingers those tender and salty flesh found on the sides of the spine and place the juicy meat on your mouth, delicioso..... The ribs and its cartilage and the meat in between- succulent. When you nibble on a lechon leg with the crispy skin still intact, the experience is indescribable. Boneless lechon, headless and armless, lying on top of the table to me looks like a big rolled up tubol expelled from some really big, giant, constipated animal, if you know what I mean. He he he.
