Both Sides Now Having worked as a relief chef from Cornwall to Shetland over the past 10 years it was interesting to see things from the other side as a head chef for the past couple of seasons. Last year I was at The Tongue Hotel where it had proved impossible to employ a sous chef for the season and a succession of Chefs In Scotland boys valiantly pitched up to lend a hand. First up was Phil Smith whose ways with a brown crab and squeezing the maximum GP out of the unpromising contents of a freezer were surpassed only by his prowess at dominoes, we soon had a nightly school going. Next up was sharp dressed Frank MacDonald, for a short stay due to an unfortunate “permanent” appointment being made early in his booked stint. Frank scored highly for playing Joy Division in the kitchen and mercilessly correcting my English pronunciation of Scottish words. After a dodgy Zimbabwean interlude came Sean Angus, with a great eye for presentation and a good few tricks of the trade. We managed to get through one busy service as the Gallagher brothers, and several more in terrible Australian accents. Guess you had to be there….or have seen the film “Chopper”. Last but very far from least, and the man who stayed on after I finished at the end of September was Andy Mill, a more calm, reassuring presence in the kitchen you could not ask for. Mr Reliable, and a great cook too. All in all a great insight into the great qualities of Chefs In Scotland Chefs…and now I see another side from the office!
