Bring some sun into your winter kitchen...make this surprisingly simple dessert with the fancy name: POACHED PEARS IN WINE SAUCE Using an apple slicer, slice each ripe pear and remove the core. In a heavy 4-quart pot or Dutch Oven, pour ½ cup white wine (or apple juice). Add ½ teaspoon cinnamon and ¼ cup raisins. Bring to a boil, and gently place the pear slices in the boiling liquid. Simmer over low heat for 10 minutes. Using a slotted spoon, carefully remove the pears from the liquid and place in a heat-proof serving dish. Raise the fire, and boil the juice until it has reduced to less than ¼ of the original amount. Pour the hot juice over the pears, garnish with a sprig of mint or piece of cinnamon stick, and serve.
