Bring the BBQ to life with Micks Meat Barn Lamb Loin Chops this Australia Day! Our Lamb Loin Chops are on special for only $15/kg this weekend at Micks Meat Barn, thats almost half price! Perfect to be teamed with fresh salad greens, feta, tomatoes and beetroot for Micks Meat Barn Dinner of the Week... Micks Lamb Loin Chops with a Beetroot & Feta Salad Ingredients: 6-8 Lamb Loin Chops 1 cup Greek Feta, crumbled 1 cup (Canned) Beetroot, diced 120g Bag Mixed Salad Leaves 1/4 cup Basil Leaves, roughly torn 1 cup Cherry Tomatoes, halved 2 tbsp Balsamic Vinegar Sea Salt & Pepper Olive Oil Method: Step One - Prepare your lamb loin chops by lightly seasoning each side of the meat with sea salt and pepper. Step Two - Prepare the salad by tossing the beetroot, feta, salad leaves, basil and cherry tomatoes in a bowl. Refrigerate until serving. Step Three - Over a medium-high heat grill the lamb loin chops for 3-4 minutes each side. Set aside for 4 minutes, covered. Step Four - Dress the salad with a splash of olive oil and the balsamic vinegar. Toss to combine. Plate the lamb loin chops alongside the dressed salad and serve.
