Buffalo Chicken Sliders (Yields 8 portions) Ingredients Breaded Chicken 2 lbs of chicken breasts cut into 2 oz portions. 8 egg yolks for egg wash 2 cups of seasoned with all purpose seasoning 2 cups of course Italian breadcrumbs 1 cup of bleu cheese crumbles 2 cups of ranch or bleu cheese dressing for dipping. 16 each Hawaiian bread for sliders. Celery Sticks and Carrot Sticks for garnish. Lard for deep frying Buffalo wing sauce 4 cups of buffalo wing sauce (Franks) 1/2 cup of vinegar 1 cup of honey ½ lb of butter Procedure: (Cast iron with 350F fryer oil, oven at 350F) 1. Bread chicken with seasoned flour, egg wash and Italian breadcrumbs. 2. In a 350 degree oil in cast iron deep fry chicken. Drain on paper towels and reserve warm. 3. Make Buffalo wing sauce by heating up wing sauce, vinegar and honey. Bring to a boil and fold in butter. 4. Toss chicken in wing sauce. Pan in cast iron serving vessel, top with crumbled blue cheese. 5. Place in 350F until bleu cheese melts. 6. Garnish with celery and carrot sticks and bowl of ranch or bleu cheese dressing.
