Buona primavera! Finally, SPRING is here. At least thats what the calendar says. But really, I have a good feeling about spring and all the delicious fresh local vegetables it will bring very soon: fresh greens, asparagus, carrots, cucumbers, ramps, peas, and LEEKS! In fact, this week we were testing my Torta di Porri (Leek Tart) at Il Ristorante Rosi. This is one of my favorite snacks and for sure it will be even better when the spring leeks are ready.
