CACAO Muffins made in a bowl - simple, easy nutritious and delicious - what more could you ask for? Equipment - anything that mixes from a spoon to a kitchen aid to a food processor to a thermomix = SIMPLE Ingredients = NUTRITIOUS: 1 ½ cups (150g) almond meal, best nutritious is from freshly ground activated almonds. if nuts arent your thing try freshly ground activated sunflower and or pepita seed meal. or if you are not into nuts or seeds try wholemeal spelt flour or what is in your pantry. ¼ cup (21 g) raw cacao powder - awesome ingredient for your pantry! 1 teaspoon gluten free baking powder 2 free range/ organic eggs 1 teaspoon vanilla extract 60 ml (1/4 cup) macadamia nut oil, light olive oil, avocado oil, cold pressed coconut oil or organic melted butter 60 ml milk (¼ cup) your choice of milk: dairy, almond, coconut, rice (not soy) 2 tablespoons honey, maple syrup or rice malt syrup Steps = SIMPLE: 1. Preheat oven to 160 C – fan forced. 180 C no fan. 2. Combine almond meal, cocoa powder and baking powder. 3. Add the eggs, oil, milk and honey then mix well to form a smooth batter. 4. Spoon into 12 small individual cupcake tins - in the video I made a half batch, definitely worth making a full one, it only made 4 medium sized muffins. 5. Bake for 25 minutes until puffed and cooked through. Test with a skewer - comes out clean when cooked ;-) Cool or not and eat.
