✨CHOC MINT CHRISTMAS TREE BROWNIES✨ Hows this for a fun healthy holiday treat? Clean eating choc mint brownies decorated to resemble Christmas Trees. Theyre easy to make, look great on a Christmas platter at parties, and the kids will love being in charge of the decorations! Sugar free and loaded with wholesome nutritious ingredients. Makes 24 BROWNIES 2 scoops Giant Sports Delicious chocolate protein powder (can be substituted with 1/2 cup oat flour to make kid friendly) 120g dark cooking chocolate 1 cup coconut oil 2 cups Natvia 1sp vanilla extract 4 eggs ¾ cup oat flour 1tsp baking powder 230g dark chocolate chips (optional – omit at your own risk!) FROSTING ½ avocado 1 small banana ¼ cup coconut butter 3 tbs coconut oil ½ tbs vanilla extract 1 tsp peppermint extract Small handful of spinach ½ tbs water TO SERVE Cacao nibs or your choice of mixed fruit Gluten free crisp breads 24 x Raspberries 1.Melt the cooking chocolate and coconut oil in a saucepan on low heat. Once melted remove from heat and set aside to cool. 2.In a mixing bowl combine Natvia, vanilla and eggs. 3.Add in the chocolate mixture 4.Sift in the remaining dry ingredients and mix until well combined. 5.Fold in the dark chocolate chips. 6.Spread the batter into a rectangular greased baking pan and bake in the oven at 180 degrees C for approx. 30-40 mins. 7.Remove from oven and set aside to cool. 8.To make the frosting, combine all ingredients into a food processor and blend until smooth. Spread over the top of the brownie and sprinkle with cacao nibs. 9.Using a large sharp knife, slice the brownie into triangles. Insert a small crisp bread into the base of each triangle and top with a raspberry to make Christmas trees. MACROS (per slice): 238 Calories / 5P / 13C / 19F
