COCONUT & LIME CAKE RECIPE (SMOOTH TEXTURE) Thank you to everyone who expressed an interest in my recipe and cake posted a couple of days ago :) Give this a try if you like the flavour of coconut, but something about the texture of it is not so appealing! (Smooth texture cakes make far smoother cake pops too, of course!!) Here we go:- FOR THE CAKE 200g (1 cup) caster sugar 200g (3/4 cup) softened butter 4 medium eggs beaten 200g (1 and 3/4 cup) self raising flour 1 teaspoon baking powder 2 tablespoons milk 200g (1/2 pound) block of creamed coconut 125ml (1/2 cup) Coconut CREAM UHT (not milk) (sold in little cartons in Asian section of UK supermarkets (eg Blue Dragon brand) - 250ml in one carton) FOR THE FROSTING Zest and juice of 3 limes (keep a little zest for decoration if you wish) 100g (1/3 cup) softened butter half of the grated block of creamed coconut detailed above 250g (2 and 1/2 cups) icing sugar sifted Malibu (optional) 60ml (1/4 cup) Coconut Cream UHT from the remainder of the carton detailed above.....or more if your frosting is too thick! METHOD Heat oven to 190C (375F) or FAN 170C (325F) Gas 5. Line two 8 inch tins with baking paper (or spray two silicone pans with cake release spray if you are me!) Grate the 200g block of coconut and KEEP HALF OF IT ASIDE. Beat all the cake ingredients together in a large bowl, including one half of the grated coconut block, until you have a smooth, soft batter. Divide the mix between the tins and bake for approx 30 mins. Leave to cool completely. Finely zest the three limes and mix together the remaining grated creamed coconut, zest and juice. Microwave on high for 30 secs. Make a buttercream using the butter and half of the icing sugar. Add the coconut cream to the coconut zest mix and beat in with the remaining icing sugar. Add some Malibu if you wish...or more coconut cream.. till you are happy with the consistency for spreading. Sandwich two halves together with frosting, then cover sides and top. Decorate with toasted dessicated coconut....or lookalike white sprinkles (jimmies)...a little lime zest......whatever you wish! Good luck...and I hope my US conversions come out ok!!
