COCONUT PRAWN BURGERS WITH MANGO SALSA 3/4 cup white rice 1 2/3 cup coconut cream 1/2 cup water 1kg medium green prawns 1 tbsp Thai red curry paste 1 egg, beaten 1/3 cup rice flour 2 large mangoes, chopped 1 small red onion, chopped 1/4 cup coriander leaves 1/4 cup lime juice Combine rice, coconut cream and water in saucepan, bring to boil, then simmer, covered for 15 minutes. Shell and devein prawns. Chop prawns, combine with rice mixture, curry paste, egg and rice flour. Cover and chill 30 minutes. Shape into 12 large patties, fry in shallow oil until golden, and drain. Combine salsa ingredients and serve.
