COOKING TIP: ADJUSTMENTS FOR HIGH ALTITUDE BAKING (above 3000 feet) Increase oven temperature 15 to 25F degrees for cakes and quick breads. Decrease each teaspoon baking powder by 1/8 to ΒΌ teaspoon. Decrease each cup sugar by 1 to 3 tablespoons. Decrease each cup of fat by 1 to 2 tablespoons. Decrease flour just slightly. Decrease each cup of liquid 1 to 4 tablespoons. Add 1 extra egg. Yeast rises more quickly; punch down dough and allow to rise 2 times before shaping. Beat egg whites only to soft peaks rather than beating to stiff peaks.
