COOKING WITH HERBS Cucumbers With Dill Dressing Ingredients Dressing 2 cups cucumbers (thin sliced) ¼ cup cider vinegar 1 cup sliced red onion (thin sliced) 2 teaspoon vegetable oil 2 medium tomatoes cut into wedges ½ teaspoon salt ¼ teaspoon pepper 1 teaspoon dill weed (2 tsp fresh 1 teaspoon sugar Combine all ingredients for the dressing in a large bowl and mix thoroughly. Add cucumbers, tomatoes, and onions. Refrigerate for at least 30 minutes (excellent when made the night before) Fresh Herb Linguine Ingredients 8 oz. linguine 1 ½ teaspoons fresh oregano 1/3 cup butter 2 teaspoons basil 1 teaspoon minced fresh garlic 1 tablespoon lemon juice 1/3 cup fresh parsley 1 cup freshly grated Parmesan cheese Cook linguine in a medium to large sauce pan then drain and remove from pan. In that same sauce pan cook the butter and garlic for 3 to 4 minutes. Stir in linguine and all other ingredients except for the cheese. Plate the linguine then sprinkle with Parmesan cheese. Baked Chicken With Herbs Ingredients 3 chicken breast boneless skinless (cubed) ¼ cup lemon verbena 1/3 cup butter or olive oil 2 tablespoons lemon thyme 4 cloves garlic salt and pepper (to your taste) ¼ cup rosemary roasting pan and foil Combine all ingredients in roasting pan cover with foil bake at 400 degrees for 45 minutes to an hour Mint Simple Syrup Ingredients 1cup sugar 1cup water 1cup loosely packed mint leaves Combine all ingredients together in a medium sauce pan on medium-high heat and bring them to a boil. Simmer for 1 minute stirring occasionally. Remove from heat and let stand for 3 minutes. Strain out mint leaves and store in an air tight container for 4 hours.
