COOT STIR FRY!! Yes, you read that correctly. COOT. Friends and I had a great coot shoot on a slow day on the marsh. This was my 2nd time eating the infamous Coot and I must say it is terribly under valued! I included the one gadwall as it happened to be there and you couldnt tell the difference...at all I first marinated the breasts in a mixture of teriyaki, (low sodium) soy sauce, ponzu, minced garlic, and ginger powder for 24 hours or so. Brought to room temperature, drained and sliced into small strips against the grain. Then, dredged in corn starch with a little salt and pepper. (Wont use salt next time) Bought a package of dried lo mein noddles (followed directions) and chopped up some fresh carrots, broccoli, asparagus, red peppers, onions, and what stir fry would be complete without baby corn!? (Can of corn) I added canola oil to a very hot pan. Added sliced coot pieces and browned very quickly on each side on a very high heat. I also added a little butter and more canola oil when needed. I then removed the Coot, (now cooked medium rare to rare), and reserved it into a separate bowl. Meanwhile, I briefly steamed the veggies to speed up the cooking process and then added them to the now empty pan with some canola oil. At that time I added maybe a 1/2 tbsp. of ginger powder and a little black pepper (looking back I couldve added red pepper flakes too!) I also added low sodium soy sauce to the veggies. As they were finishing up, still on high heat, I removed the lo mein from their water and added the noodles to the veggies, continuing to add soy sauce as I felt needed. (Looking back I shouldve used and little beef broth to minimize the sodium content). I then added the browned Coot and incorporated into the pan for just a couple of minutes. Thats it. Turned out really good! The Mrs. said of the Coot...tender & flavorful When asked how this duck dish stacked up against the rest...better than most. For those who know, Coot breasts have a softer texture than most duck breast, a quality I find as a bonus! SHARE this post with all of your Coot hating hunting buddies and next time, #respectthecoot!
