When you read my email below, you are going to realize how disappointed I am, not only with Cuba Libre restaurant but with many other restaurants mainly on central Florida area. It is truly shameful to see how many restaurants who claim to serve our authentic Cuban cuisine are destroying the essence of how our dishes taste by changing the true original recipes and then, creating their own version. If you are a professional Gourmet chef with a well centered conscious of what a traditional dish is all about, from any country, you would never, ever change the recipe. With that said, I want to add that, there is nothing wrong to create new innovated dishes with a flare of the typical seasoning of any country the chef is trying to represent but if that is the case, then, those dishes can Not be classified as a Classic/Traditional dish. EMAIL: I was raised eating AUTHENTIC Cuban . During our childhood and teenage years our dad would take the family for dinner on weekends. Many times he will take us to restaurants were the menus had nothing to do with our classic Cuban food so that we would learn to eat typical dishes from other nations. On many other times we would go to eat at restaurants were our AUTHENTIC Cuban food was served. My sister and I were really enthusiastic to go visit your Cuba Libre restaurant in Orlando FL. The name of the restaurant was really meaningful to us and grabbed our attention. As we read your menu online we were stunned and disappointed to the fact that, even under what you call classic Cuban dishes were truly a joke and a disgrace. Your menu is full of fancy and attractive names so that it sounds exclusive and gourmet but is far from being classic/original/typical/traditional Cuban Food. I suggest for you to stop the nonsense and stop making believe to non Cubans that what you are serving is an authentic Cuban food. Give me a brake, take a trip to Miami were you can find mama/papas restaurants to fancy/elegant restaurant were they truly serve our Classic/Authentic Cuban food. Needless to say we are not going to your restaurant. Like us, many True Cubans will be disappointed when they see what you are doing by changing our traditional Cubans dishes/ roots.
