CUORI DI FROLLA CON MARMELLATA shortbread hearts with strawberry jam Love them with a cup of tea or with a cup of hot cocoa or even by themselves, these shortbread biscuits filled with strawberry jam are simply delicious to eat at any time of the day. To make approximately 30 biscuits you will need: 500g flour 00 or plain flour 300g unsalted butter - chilled and cubed 200g icing sugar + more to dust 3 egg yolks 1 tsp salt 1 tsp vanilla extract 1. Put all the ingredients in a food processor and whiz until the ingredients start coming together 2. Transfer the mixture on a lightly floured surface and work it with your hands to form a smooth round dough 3. Cover with cling film and flatten a little with a rolling pin. Refrigerate for 30 minutes 4. Roll the dough on a lightly floured surface to a 5mm thickness and cut out as many hearts as you can 5. Cut out small hearts in the middle of half of them and bake for 15 minutes or until golden 6. Remove and cool 7. Once completely cooled, put a teaspoon of strawberry jam in the middle of a heart and place the one with the hole on top, pressing down a little 8. Dust with a generous amount of icing sugar Tip: Use any shape of cutters. These biscuits are also delicious on their own.
