CUSTARD APPLE TEACAKE INGREDIENTS * 125g of butter at room temperature *½ cup + 3 teaspoons extra of caster sugar * 1 teaspoon of vanilla essence * 2 eggs * 1 ½ cups of self raising flour * 3 ripe custard apples, halved (about 350g each) * 3/4 of a teaspoon of ground cinnamon METHOD 1. Using electric beaters beat the butter, ½ cup of caster sugar and vanilla essence in a medium bowl until sugar dissolves and mixture is pale and creamy. Add the eggs one at a time. Beat well after each addition. 2. Using a spoon remove the pulp from the custard apples. Discard the seeds and add the pulp to the mixture. Mix well until combined. 3. Using a large metal spoon, fold the flour in 2 batches into the mixture. Spoon into a loaf pan and smooth the top. 4. Combine the extra sugar and cinnamon and sprinkle over mixture. Bake for 1 hour or until a skewer comes out clean. Remove from oven and stand for 5 minutes before turning cake out onto a wire rack to cool SLICE, SERVE AND ENJOY :) HA
