This is my favorite easy GO TO to #rice on busy days, naturally green and plenty of flavor...Chef Christina Arokiasamy. ENJOY! COCONUT GINGER AND GREEN ONION RICE 1. Put 5 stalks green onions, 2 inch chopped ginger and 4 garlic cloves in the blender, add some water, blend to paste. Set aside. 2. Add 4 cups coconut milk in the blender and blend to pick up any left over ginger spice paste. 3. Fry the green ginger paste in oil with 2 star anise until fragrant. 4. Add the rice, saute well. Pour in the coconut milk. 5. Bring to a boil until all liquids are gone, cover cook on low until rice is completely cooked. Alternatively cook rice in a rice cooker but add a litter water. Love it with #sambal fish, chicken curry, rendang, chili crab, mixed veggies, or as healthy nasi lemak alternative...#YUM
