Canceled practices for tonight mean that I can make dinner. I chose to bake some Finnish Pancakes. Simple, delicious and a great source of protein!! Making a little pasta on the side for the oldest who has a 5:30am swim practice tomorrow followed by the usual 3-5 practice after school. A funny tasting combo but he will appreciate it. Also taking this time to hard boil a dozen eggs for the kids as snacks or lunches for the week.
