Canned 4 jars of tomatoes tonite...no more wasted tomatoes in this house......what doesnt get sold, gets either eaten or preserved. It is a very easy but a litlte time consuming procedure. First you have to have a large pot to sterilize the jars in which will also double as the water-bath pot at the end. Then a smaller pot to boil the tomatoes in, just a few at a time for 3-4 minutes only. After this, the tomatoes are immediately dunked in a bowl of cold water. This causes the skins to slide right off the tomato. once the tomato is deskinned, it goes into the jar, this being repeated till the jar is nearly full, then hot water is ladled in to fill it up to 1/4 from the top. Two tablespoons of lemon juice are then added and the jar is sealed with the two piece Ball lids (NOTE: the jars are reuseable the lids are NOT!) , and set aside. I repeated this with three other jars then placed all four into the hot water bath, being sure that there was enough water to cover the tops of the jars about two inches over. Leave in for 45 minutes and during this time, you may hear a pop-pop sound, which is the sound of the vacuum seal being created. at the end of 45 minutes, lift them out and set aside to cool till morning and there you have it, preserved tomatoes, useful for making sauce, salsa, ketchup, or whatever you care to make with tomatoes.
