Canning apples : 12 lbs apples,4 cups of sugar,1 tsp salt,1 tsp nutmeg,2 tsp cinnamon,10 cups water,3 T. lemon juice. Make a syrup of sugar,salt,nutmeg,cinnamon and water.Bring to a boil, and boil for 1 minute. Add lemon juice.Put 1 1/2 cups of this in each jar and fill with sliced or rings of apples and pack leaving 1/2 inch head space. Wipe rim of jar clean with a damp towel. Adjust 2 piece caps and process pints 15 minutes or quarts for 20 minutes in a boiling water bath. Makes about 9 pints.(It just says sliced, but I am going to try rings too)
