Capi Peck its all your fault. With this bad cold all I could think about all day was Pasole. But as there isnt a Wild Oats or organic grocery store for thirty miles, I improvise. I came up with Oklahoma Redneck Pasole. First of all feed the kids some spagettios and roadkill meatballs. This stew is too good to waste on kids. Besides, they have deer to butcher! Then stirfry an onion in bacon grease, throw in some pork shoulder or butt, whatever is on sale at the local Sav A Lot. Pour a big ol beer on top. We had a vintage ODouls on hand. Add a lotta canned crushed tomatoes, Rotel, a can of green chiles, a couple of chopped El Guapo Pasilla Ancho chilis. By now my sinuses opened, I am beginning to smell food for the first time in a week and feeling hungry I decided appetisers are a must! I break out the good stuff. Waffle cut tater chips and French Onion sour cream dip!!! Nomnomnom! Time to clean out the Fridge. While the men folk are finishing up butchering fresh venison for the winter, I realize I am fresh out of cilantro and hominy! Oh no! Were in luck! But ewwww! GMO corn and cilantro paste from the Walmarts! Not hominy, but its in the corn family (as long as you dont try to feed it to wild life who know better). Finally our Redneck Pasole is done!!! Topped with fresh radiccio vs radish, sourcream, and Vicks Vapo Rub, a meal fit for a Red Earth Pioneer Woman! Bon Appetit yall!
