Cauliflower Soup You will need 1 head of cauliflower (size med or large) Two tbsp roasted shallots (if you use fresh shallots use about 4 lightly oiled with olive oil and roasted in their skin) 4 medium size carrots 6 to 8 pieces of crisp bacon 3 tbsp of bacon fat 3 14.5 oz cans of low fat low sodium chicken broth. Olive oil The first thing I do is clean the cauliflower and cut it into pieces. (each section of cauliflower should be cut in two so it wont take so long for it to roast. Lightly cover with extra virgin olive oil. Salt and pepper. Place in a pan and roast in oven 35 min at 350. You want it to start to brown a little. While it is roasting chop the carrots and set aside. ------------------------------------------------------- Fry 6 to 8 pieces of bacon till crisp. Remove the bacon and add three tbsp of the bacon fat to a heavy kettle. Add two tbsp of roasted chopped shallots (these can be purchased in the produce section in a small jar) and saute 1 min. Add the two cups of diced carrots ( I ran mine in a small chopper) and saute for three or four minutes. Add salt and pepper Next add the roasted cauliflower Next add 3- 14.5 oz cans of low fat low sodium chicken broth to the ingredients and simmer for 25 minutes. Remove from the heat and let cool about 15 min. Now add 1/4 cup of evaporated milk (could be heavy cream). Using a blender ( I use a stick blender) blend the mix until there are no chunks in the soup. I sprinkle in a little garlic powder. Place back on low heat till it just starts to bubble then remove from heat and stir. Ladle into a bowl and garnish with pieces of bacon or small pieces of green onion. Eat alone or pair with a toasted BLT! Delicious! If you are someone who does not use bacon fat you could use olive oil and garnish with green onion, chives or a little cheddar cheese. I make a form of this soup using broccoli heavy cream and cheddar cheese. I have added hot sauce. I have added ground flax seed that gave it a nuttier taste.
