Change of plans, doing call tomorrow! I need to go to sleep.. I am in pain and I need to go ahead and get rest :) But here is DAY 1 of the menu.. :) Will post more tomorrow, xo! Monday Breakfast eggs any way u want them 2-4 pieces of Bacon cup of Mushrooms eggs any way you want them.. Can add in. Onions, mushrooms, bacon bites, check carbs on the label and make sure there are no hidden sugar! You can also have cheese, green, red or yellow peppers to! Or you can have a ham, make sure its no sugar added! Or you cant eat it!... You can make a steak and some eggs! Or eggs and bacon! Use real butter, and olive oil a lot :) this is mushroom... no fake butter lol or margarine! Ok for lunch! Lunch homemade chicken salad you can add onions, mushrooms peppers, celiery, green onion, all about what you like! I love extra MAYO, guess what, watch the carb count & the sugars!!!!! Eat a whole cucumber.. Put it in a bag with lemon juice, garlic powder salt and pepper put in fridge until lunch time.. SO YUMMY! ;) and then cut it and then eat it and enjoy =) Or if you don’t like the chicken salad. You can do grilled steak or grilled chicken, with a salad, or green beans or cabbage.... If you don’t like the cucumber, you could saute some mushrooms with olive oil and butter, salt & pepper and garlic yum!.. or you could do stuffed mushrooms ;) Okay and for dinner Baked Spaghetti Squash Lasagna Style green beans with bacon Bacon Wrapped eggs Ingredients: 1 package bacon 1 box of eggs Shredded cheddar, crumbled goat cheese, or any cheese you like Chopped herbs such as chives, dill, thyme or salt&pepper., Garlic. Etc You can also put onions, mushrooms etc if you want. 1. On medium heat, fry bacon on a skillet until slightly browned on each side, but still pliable - dont let them get crispy 2. Drain on paper towels and let cool 3. Preheat oven to 400 4. Line muffin cups (or ramekins) with bacon slices, making sure to cover the bottom too (tear off chunks of bacon to fill the bottom) 5. Crack an egg into each cup 6. Add cheese on bottom 7. Sprinkle with herbs, salt and freshly cracked pepper 8 put a little more cheese not much tho! 9. Bake until set, approx 15 min 10. Carefully run a knife around each to loosen from the cup and remove Chicken Salad Ingredients 4 slices bacon 2½ cups cooked chicken, diced ½ cup celery, finely chopped 1 tbsp sugar-free sweet pickle relish ½ tsp black pepper ½ cup mayonnaise Instructions Fry, and then chop bacon coarsely. Combine bacon, chicken, celery, sugar free sweet pickle relish, black pepper, and mayo in a large bowl. Chill Baked Spaghetti Squash Lasagna Style INGREDIENTS: 1 spaghetti squash, halved lengthwise and seeded 1 onion, chopped 2 tablespoons minced garlic 2 (14 ounce) cans stewed tomatoes 1 tablespoon dried basil 1 cube vegetable bouillon black pepper to taste 1 (15 ounce) can black olives, chopped 1 cup shredded mozzarella cheese 1 cup shredded Parmesan cheese DIRECTIONS: 1. Preheat oven to 325 degrees F (165 degrees C). Spray a baking sheet with a thin layer of cooking spray. Place squash halves cut side down on the baking sheet. 2. Bake squash 35 minutes in the preheated oven, or until a knife can be easily inserted. Remove from oven, and cool. 3. Meanwhile, spray a non-stick saucepan with cooking spray. Over medium heat, saute the onion and garlic until golden brown. Stir in tomatoes, basil, bouillon cube, and black pepper. Cook for about 15 minutes, or until you have a medium thick sauce. 4. Remove squash strands with a fork, reserving the shells. Layer each half with a spoonful of the sauce, a layer of spaghetti squash strands, olives, and mozzarella cheese. Repeat layers until shells are full, or until all of the ingredients are used. Top with Parmesan cheese. 5. Bake for 20 minutes in the preheated oven, or until Parmesan cheese melts. No bread, No Pasta, No soda!! :) Lets do this
