Cheap Nutritious Food One of the most nutritious vegetables and least expensive is cabbage, however it is often poorly cooked. If you cook cabbage more 10 or 15 minutes, it can become sulfury smelling like a bit of a faint rotten egg smell. However, cabbage cooked slightly in a saute pan and mixed with butter and onion is divine. Simply cut into pieces perhaps an inch square. For my dear wife and I, first I start the pan warming on 7, then I take a wedge of about 1/8th of a head of green cabbage. I quickly chop it into 1 size pieces and toss that in the pan along with a pat of butter and perhaps a spoonful of water. Then I use about half a yellow onion and slice that or chop it up and add it to the cabbage. Keep stirring now and then and then put a lid on it for a couple minutes while turning the heat down to halfway, 5 perhaps. I lift the lid and flip it over like you see people flip flapjacks on cartoons. I add another spoonful of water if needed to keep it from getting too hot. Add salt and pepper. Total cooking time is 10 minutes. Its cheap and very high vitamin C, as well as delicious. Another thing you can do is mix mashed potatoes in, about 1/3 of the amount of cooked cabbage. Whip it up and this is called colcannon. It is an Irish staple. Its delicious and makes it seem very hearty and satisfying without really being high in carbs. Season to taste. Enjoy.
