Check out this Superfood Salad - comes really handy now after over indulging at the Christmas table! Serves 4 Ingredients 3 sweet potatoes peeled and cubed ( dry roast) 3 large beets peeled and cubed (dry roast) 1 head of kale, ripped into tiny pieces Large handful’s of fresh Chopped mint and basil 1 avocado, diced 1/2 a bag of frozen baby peas, thawed 2 cups cooked quinoa (I used a mix of white, black, and red quinoa) Approx 200g Feta A couple of handfuls of cherry tomatoes, sliced in half Spiced Pepitas, Avaliable from Terra Viva (Spanish snacking mixes delicious nuts) Dressing (any kind, available from Terra viva) Sea salt and fresh cracked pepper Method 1. For the quinoa: In a pot over medium heat, bring 4 cups of water to a boil. Add quinoa and a dash of sea salt and cook covered until all the moisture is absorbed, about 15mins. Remove from heat and keep covered. 2. Assembly: Layer all your ingredients in a large bowl and toss with fresh cracked pepper and a dash of your favourite vinaigrette dressing from Terra viva.
