Cheeseburger & Fries Soup added by Lisa Nicometi Garrow Pantry Cleaner What a hearty meal!! This has that true cheeseburger taste with ketchup and mustard added along with the french fry sticks. (they are addicting.) I served a handful in soup and some on the side! Great for dipping. Will be serving Superbowl Sunday instead of chili! Dont think My football fans will mind! Cook time: 40 Min Prep time: 15 Min Serves: 8 Ingredients 1 lb ground sirloin 1 c chopped onion 3/4 c chopped celery 1/2 c sliced carrots 1 clove garlic minced 3 c chicken stock 2 c russet potatoes diced 1 tsp dried basil 3 Tbsp unsalted butter 1/4 c all purpose flour 1 1/2 c whole milk 2 c grated cheddar cheese 1/4 c ketchup 2 tsp yellow mustard salt & pepper to taste SHOESTRING FRIES potatoes mandolin to make shoe string fries salt Directions 1. Brown beef in 1 tablespoon butter in large pot over med high heat. Cook until meat begins to brown, then add celery, carrots & onion til soft. about ten minutes. Throw in garlic for 1min, stirring. 2. Stir in the stock, potatoes and basil, bring to boil. Reduce heat and simmer for 12min. or until potatoes are cooked through. 3. Melt 3 tablespoons butter in a saucepan over med heat. Whisk in flour and cook 1-2min. Add the milk, whisking until smooth scrapping bottom of pan. Add the milk mixture to the soup and bring to boil, then reduce to simmer Add cheese, ketchup, mustard, salt and pepper, stirring till cheese is melted. Serve with Your shoestring fries. 4. For fries used peeled clean potatoes. Cut into thin strips or use a mandolin that cuts into thin strips. Deep fry in 350 degree oil til golden brown. Drain on paper bag and salt.
