Grease and line a baking dish with baking paper. Cook the potatoes in salted boiling water until knifepoint tender. Allow to cool slightly, then peel and cut into slices. Arrange some potato slices into a layer in the dish, season, scatter with some of the cheese and repeat for the next 3 – 4 layers, but do not yet top the last layer with cheese. In a medium saucepan set over moderate heat, combine the garlic, rosemary leaves and cream. Heat until just under boiling point. Evenly pour the hot cream over the dish and sprinkle the remaining cheese over. Bake until bubbling and most of the liquid has been absorbed, and the cheese is golden brown (about 30 – 40 min.).
