The local Broome, owner-operator skippers of The Great Escape show our 14 guests who are on their holiday of a lifetime, the secrets and hidden treasures of this awe-inspiring region. This is your opportunity to showcase your culinary talents as our onboard chef & join a professional crew aboard a stylish 14 berth vessel. YOUR ROLE As part of the 6 member crew, the chef is instrumental in delivering fresh, quality, creative, gourmet cuisine (including freshly caught seafood) to approximately 20 guests and crew onboard. This includes breakfast, morning tea, lunch, dinner entrée, dinner main, dinner dessert every day. You also need to keep the gallery, clean tidy and well organised. ESSENTIAL SELECTION CRITERIA To be considered for this position, it is essential that you: are proficient in all kitchen operations from preparation though to cooking and presentation of all meals Be able to present a visual food portfolio with descriptions of past dishes you have created Have a passion for high quality food and presentation Be proficient in ordering and stock control Are blessed with patience and excellent communication skills to liaise directly with guests (no hot headed chefs allowed :)) Understand that your role involves working in a remote environment and all crew help each other out with shared duties Above all be a genuine team player with a professional work ethic Have a passion for preparing and cooking fresh seafood (Barramundi, Mangrove Jack, Mudcrabs etc) Have a trade certificate or appropriate experience as a chef DUTIES & RESPONSIBILITIES Menu planning Food ordering & stock control in a remote environment Cooking mouth watering meals Creativity and patience when tackling guest food allergies and specific guest requirements Ensuring galley is kept clean, orderly and to all health requirements Conduct land and water based excursions as required by the skipper or First Mate Loading stores and equipment onto the vessel Greet all tenders arriving to the boat and assist with guests on and off Other duties as required If you feel confident your competencies match the essential criteria and you are interested in applying for this position, please apply below and ensure you have included the following: Provide a cover letter expressing your interest in the positionaddressing the 9 Key Selection Criteria requirements listed above Ensure your resume is up to date Include recent referees Provide a visual food portfolio with descriptions, (from past dishes you have created) electronically (No larger than 5MB) Interviews: Conducted at the end of January 2015 Start Date: Mid February 2015.
