Chicken Cacciatore- Jackies way 4- boneless skinless chicken breasts (this is all I cook with, you could do bone in/skin chicken if you wanted) a few tblsp of butter a few sprinkles of salt a pinch or two of pepper a pinch of red pepper flakes 3-4 tblsp of flour 1 whole onion 1 red pepper (you can do any color, but I had red on hand) 3 garlic cloves 1 can of chopped tomatos, ( mine were already seasoned with garlic, basil) 2 cups of wine 1 package of egg noodles Put a few tablespoons of butter in a pan. Mix salt, pepper, and flour together, dip each chicken breast to give a light coating, place in pan, and brown the outside, but do not cook chicken fully. While this is cooking, chop onions, garlic, and peppers. When chicken is done browning, take off, set aside, in same pan, add a little bit more butter if the pan is kind of dry, add onions, cook for a about 4-5 minutes, add garlic, cook for another 2 minutes, if pan is dry, I usually add a few tablespoons of water so they dont stick/burn. Add bell peppers to mixture, cook until they are somewhat soft/firm maybe 3-4 minutes.Add a few red pepper flakes and then Add 2 cups of wine, deglaze pan, and reduce by half. Return chicken to the pan, add tomatos, cover but leave a slight opening. Check the level of sauce periodically, add water if needed. The sauce should be about level with the chicken. Cook the egg noodles according to package. This next step can be left out if wanted, however I found that I chopped the veggies a bit too big, and also the tomatos were a bit to chunky as well.I do not have an immersion blender so I had to do this the old school way. Lol After the chicken was cooked, I took it out of the pan and put it to the side, I scooped out the veggies, put in a separate bowl used a potato masher and mashed them to create a chunky type consistency. Put that back in the pan, and wanted to thicken the sauce a bit since I put it over noodles. So I mixed a bit of flour and water, then poured it in the pan. Added the chicken and dinner was done :-) Side Note: This recipe generally calls for mushrooms, but I didnt have any so I left them out :-) This was a VERY good dish, and I would definitely make it again.
