Chicken Meatball & Vegetable Minestrone !! Family tradition and favourite! My mums homemade soups were always a weekly meal in our household when I was growing up. This minestrone is always a huge pleaser with my kids come summer winter anytime of the year. Having meatballs at a bite size portion in meal other than traditional tomato sauce with pasta. This a great way to vary your meat and three veg meal you would normally eat. Enjoy!! 500g chicken mince 1/2 cup grated Parmesan 2 eggs 1/2 cup breadcrumbs 1 tablespoon chopped parsley fine 1 clove garlic chopped small and finely( you can also use garlic powder as an alternative 1 teaspoon) 1 teaspoon salt 2 carrots diced small 2-3 sticks of celery finely sliced 4 medium size potatoes cubed small 1 can cannelini beans drained 1/2 cup peas optional 1/2 cup corn optional 1/2 packet small shell macaroni( you can use and small size macaroni lots of different varieties) 1/2 bottle tomato cooking sauce (I use homemade fresh sauce our bottle size is 750ml) 1 small can chopped tomatoes Finely diced basil 1 teaspoon salt to season the broth and veggies Water ( the amount will vary on the size of saucepan your using, you need to fill at least half way full. Once you add your meatballs and veggies it will rise the liquid to the surface) 1-2 teaspoons olive oil Fill your saucepan half wayang add your tomato sauce, chopped tomatoes, basil, salt and oil. Simmer till lightly boil, reduce heat add your veggies and simmer real low whilst you prepare or you can prepare before this stage your meatballs( 5-7 mins prep). Meatballs mixture: Place mince in a bowl. Add eggs, breadcrumbs, cheese, garlic, parsley and salt. Mix with your hands till its thoroughly combined. Roll into small balls. Add to your broth and simmer with the veggies gently stirring for 45min - 1 hour. Try a meatball check inside should be white and soft to chew. In a separate little saucepan whilst your broth is simmering boil hot water half way then add your macaroni and cook till its soft and ready. Take your broth off the heat and add your macaroni, mix gently and serve. Sprinkle with Parmesan over the top (optional) I always have extra for the next day, as you see by the size of my saucepan. The veggies you choose to have are endless and you can mix it up. Enjoy!!
