Chicken and broccoli pie I have no idea how I stumbled across this recipe, but we happened to have everything we need for it, so I thought I would give it a try. I googled the recipe, and I found a match scatteredthoughtsofacraftymom/2013/01/chicken-and-broccoli-pie.html. We didnt have the frozen broccoli, but we had plenty of fresh. I also needed to double the recipe to make sure there was enough, and moved up to a 13x9 pan. Chicken and Broccoli Pie 4 cups broccoli, chopped (I measured it first, and chopped it after, I figured being a little light on broccoli would not hurt) 2 cups shredded cheddar cheese (and more later) 2 cups cooked chicken chopped (just eyeballed this, if it was long or short, no worries) 1 cup onion chopped (half of a huge yellow onion) 1 cup bisquick 2 cups milk 1 teaspoon salt 1 teaspoon pepper (yes, I doubled it from above, no harm done) 4 eggs. I poured some olive oil into the baking dish, and smeared it about. Dump the broccoli and cheese into the pan, and spread it. The recipe suggests mixing the remaining ingredients with a whisk. I suggest instead putting the bisquick, flower, salt, pepper and eggs together, whisking that, and then mixing in the chicken and onion. In my first attempt I did not whisk, and the mixture was not even, but no harm was done. Bake at 400 for 35 to 38 minutes. In my case, I set it for 35, but I pulled it out at 32 minutes. I cook with my nose, and it smelled done. Last step, more grated cheese, and back into the oven for a few minutes (or until some browning occurs). Enjoy!
