Chicken with herbs kidney beans and white rice. (Serves 4). Ingredients: 4 chicken legs. ( frozen or un frozen). Champignons or other mushrooms, 4 hands full. 2 to 3 onions. Garlic to taste. Oregano. Rosemary. Curry powder, or Curry Java. Pepper. Salt. Sambal ulek. ( Chili paste ). Canned kidney beans, 1 can per 3 persons. ---------------------------------------------------------------------------------------------------------Brown the ( frozen) chicken legs in a frying pan. Ad some salt and herbs. Closing up the skin, (upper side brown). Take the Chicken from the pan. (Then use the fat to make gravy, heat well, add boiling water, in the same pan). ------------------------------------------------------------------------------------------------------------- Meanwhile preheat the oven for about 10 minutes. Put the chicken legs in a glass baking dish , no lid. Set to 200 degrees Celsius, about 75 minutes, (Shorter if the meat was not frozen). Every now and then check ... (unfrozen legs take less time, small legs take less time).. Put some olive oil in first, at the bottom of the baking dish, then add mushrooms, cut an onion into crescents. Place the legs on the bed of onions and mushrooms, sprinkle oregano, Rosemary, salt, and curry powder over the chicken legs, and If needed some olive oil. To make the herbs stick. ------------------------------------------------------------------------------------------------------------------- Boil a pan of white rice (or potatoes if you don’t like rice). ---------------------------------------------------------------------------------------------------------------------- Fry kidney beans in a frying pan. Start with onions, fry them till they are translucent, crescents. Add the beans, (first drain them), then add chili paste, curry powder, oregano and Rosemary in the frying pan. Stir-fry until they well heated. Add other fresh herbs if you have those. Serve the Chicken legs, beans, mushrooms and rice on a plate. The onions, herbs and the water that came out of the mushrooms and onions, and the oil in the baking dish you add to the gravy. Do not waste, the taste of the meat herbs and mushrooms is in the water that came from the mushrooms.
