#ChocolateZucchiniCake #AnyExcuseToAddVegies #YourChoice 1 zucchini (grated or I pass mine through a food processor) 120 g Butter 100 g vegetable oil 350 g caster sugar 1 teaspoon vanilla extract 1 teaspoon baking soda Half teaspoon baking powder Half teaspoon salt 2 Eggs (Large) 110 g sour cream 350 g wholemeal plain flour 70 g Cocoa / Cacao Powder 1. Preheat Oven to 200C Fan Forced; Prepare a 25cm Spring Form tin, with Baking Paper; 2. Place Zucchini in the food processor and whiz until quite fine (the smaller it is the less idea the kids will have!!). 3. Add melted butter, Oil, Sugar, Vanilla, Baking Soda, Baking Powder, Salt and Eggs and mix together. 4. work in the Sour Cream, Flour, Cocoa. 5. Pour batter into the baking tin; 6. Bake for 40 - 45 minutes. Test centre of cake with a skewer to see if it is done. Allow the Cake to sit in the tin for 5 minutes, before removing to cool completely on a wire rack. Enjoy!!! A & M
