Cholay Ingredients Chick pieces (soak overnight)200 gm Soda 1 tsp Water 6 cups Onion (chopped)1 Crushed red chili 1 tbsp Garlic paste 1 tsp Salt 1 tsp Coriander seed (roasted coarsely crushed) 2 tsp Roasted white cumin (coarsely grinded) 1 tsp Tamarind pulp ½ cup Coriander leaves chopped 2 tbsp Green chilies chopped 2 tbsp Oil ½ cup For baghar White cumin ½ tsp Fenugreek seeds ¼ tsp Mustard seeds ½ tsp Onion seeds ½ tsp Method Soak chick piece overnight with 1 tsp soda. Next morning wash well and boil chick piece in fresh water till tender. Heat oil; add white cumin, fenugreek seeds, mustard seeds, and onion seeds. Then add chopped onion. Fry till light golden. Then add garlic paste with chili powder, salt, crushed cumin, crushed coriander, fry well. Add boiled chick piece. Cover and cook for 10 minutes, then add tamarind pulp, cook on low flame for 10 minutes. Serve garnish with coriander leaves.
