Chop & Sticks: Chinese Sweet & Sour Chicken - 8 August 2014 You’ll need: For the meaty part: 250g chicken breasts, skinless & boneless, cut into bite-size cubes 1 tablespoon shaoxing wine (optional) – it’s a Chinese Rice Wine 1 green bell pepper, cut into squares 1 stalk green onion (Spring Onions or Scallions), cut into 4 cm lengths or Parsley 2 cloves garlic, crushed Oil for deep frying Batter: 2 tablespoons cake flour 2 tablespoons corn flour ¼ cup of water ¼ teaspoon baking powder Sweet & Sour Sauce 3 tablespoons Tomato Sauce 3 tablespoons chili sauce 1 teaspoon plum sauce ½ teaspoon Worcestershire Sauce ½ teaspoon oyster sauce 3 tablespoons water ½ teaspoon corn flour Pepper & Salt to taste 2 tablespoons olive oil Method: • Marinate the chicken with the rice wine in a bag for 10 minutes. • Mix the batter in a bowl. • Add the chicken pieces to the batter. • Mix the ingredients for the sauce and set aside. For the chicken: • Heat the oil in a pan. • Shake off the excess batter from the chicken before frying. • Deep fry the chicken pieces until just cooked – it do not have to be golden brown. • Transfer the chicken to a plate lined with kitchen paper. • Transfer the oil to another container, but leave ± 2 tablespoons behind in the pan. The rest: • Add the garlic to the oil and sauté. • Add the green peppers. • Add the sweet & sour sauce. • Toss in the chicken and stir fry until all of the chicken are coated with sauce. • And add the green onions. • Do a quick stir. • Served immediately with steamed white rice and a green onion or parsley garnish. If you think you do not have the time to prepare the whole recipe, you can buy the sweet & sour sauce, but do know one thing – it’s not the same as making your own. Alternatively: Try this Sweet & Sour Sauce Ingredients Original recipe makes 4 servings 2 tablespoons corn flour 1/2 cup water 2 tablespoons soy sauce 1 can pineapple (± 250g or nearest measure), drained and juice reserved 1/4 cup white wine vinegar or apple cider vinegar 1 cup white sugar or less 1/2 cup ketchup 1 medium carrot, chopped Method: Mix all the ingredients.
