Peanut Butter Chocolate Chip Pumpkin Bread Serves 12 A delicious breakfast bread that brings together all of my favorite things Prep Time - 15 min Cook Time - 45 min Total Time - 2 hr Ingredients 1/4 cup plain Nonfat Greek Yogurt 3/4 cup pumpkin puree 2 eggs 1/2 cup creamy peanut butter 1/4 cup sugar 1/2 cup brown sugar 1 tbsp. molasses 1 1/2 tbsp. pumpkin pie spice 1 tsp baking soda 2 cups flour 1 cup chocolate chips, divided Instructions 1.Preheat oven to 350 2.Spray a loaf pan with nonstick spray 3.In a large mixing bowl whisk together yogurt, pumpkin, eggs and peanut butter until smooth 4.Stir in sugars, molasses, pumpkin pie spice and baking soda until just combined 5.Stir in flour 6.Fold in 3/4 cup of chocolate chips until just combined 7.Pour batter into loaf pan 8.Sprinkle remaining chocolate chips on top of batter 9.Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean 10.Let cool and then slice 11.ENJOY!! 12.FYI...this bread freezes beautifully!!
