Coca-Cola Cake You will need: For the cake: 1 cup Coca-Cola soft drink 1/2 cup buttermilk 1 cup butter, softened 1 1/4 cups sugar 2 large eggs, lightly beaten 2 tsp vanilla extract 2 cups all purpose flour 1/4 cup unsweetened cocoa 1 tsp baking soda 1 1/2 cups mini marshmallows For the Icing: 1/2 cup butter 1/3 cup Coca-Cola soft drink 3 tbsp unsweetened cocoa 16 oz powdered sugar 1 tbsp vanilla extract Instructions: For the Cake Preheat the oven to 350 deg Fahrenheit. Combine coca-cola and buttermilk With an electric mixer, beat the butter at low speed until creamy. Gradually add the sugar, beating until blended. Add the eggs and vanilla and beat at low speed until just blended. Combine the flour, cocoa and baking soda and add to the butter mix alternating with the coca cola mix. Beat at low speed until each addition is blended well before adding the next one. Stir in the marshmallows! Pour batter into greased and floured 9X13 pan. Bake at 350 degrees Fahrenheit for about 35 minutes. I usually insert a toothpick right in the center, if it comes out dry (or ‘clean’) then the cake is done but in this case because of the marshmallows it may still be gooey. It’s important to pay attention to the time, an over baked coca cola cake is no good. You want it just right so use a timer if you can! Let it cool. For the icing The trick here is that you don’t make the icing until you’ve removed the cake from the oven. Make sure you have everything so that as soon as you take the cake out of the oven you can begin. 1. In a LARGE sauce pan (and please make sure it is in fact large because once you bring the powdered sugar into play you’ll need all the room) bring the butter, cocoa powder and coca cola to a boil on medium heat, stirring constantly until all the butter has melted and it’s mixed well. 2. Remove from heat and stir in the powdered sugar and vanilla with a whisk, it’s gonna get messy! 3. As soon as everything is mixed well, immediately pour it over the cake. Try to pour it evenly. Now, let it cool completely, serve and ENJOY! This goes fantastically with vanilla ice cream and most importantly MILK
