Coconut Bread Pudding This simple dish is made by the Bene Israelis of India. Totally delicious way to use up old bread. You can make this using only coconut milk. Ingredients for 4-6: • 1 can thick coconut milk or ½ can coconut milk and 1.5 cups milk • ½ cup unsweetened flakes of coconut (fresh or defrosted) • 1/4 teaspoon nutmeg, ground • 1 teaspoon vanilla essence • ¼ cup almonds or cashew pieces, toasted • ½ cup golden raisins • 10 slices of old white bread or day old Challah, chopped into 1 inch cubes • 4 eggs • 1½ to 2 cups white sugar powdered finely in a grinder (or granulated/castor sugar), depending on level of sweetness desired 1/2 teaspoon lemon or orange zest (optional but delicious) Method • Preheat oven to 325 F or 150 C degrees. Beat eggs, and coconut milk or milk together and strain through a sieve. Add vanilla, nutmeg, sugar and zest. • Grease one 8 by 3 by 3 oven proof dish. Stack cubed bread in the dish, alternating each layer with coconut flakes, nuts and raisins and batter until all the bread is soaked. Let soak for 20 minutes. Check pudding for moistness. If bread appears dry add ½ cup milk or coconut milk and shake well. • Sprinkle with a little granulated or coarse sugar and bake until puffy and golden brown. Serve warm.
