Coconut! The coconut tree is a member of the family Arecaceae that is know as the palm family. Coconuts have been around since the 16th – century and are found throughout the tropical and subtropical areas of South East Asian and the world. The fruit is covered in a thick layer of husk, which is extremely hard and fibrous. Cracking the coconut open reveals soft white flesh that can be eaten as is, or grated and turned into coconut cream and milk. The coconut water can be drunken fresh or added to stocks, soups or desserts. The flesh is grated and either pressed through a cold press juicer or added to water that is then soaked and pressed through a muslin cloth to separate the liquids from the flesh. The liquid is then rested to separate the cream from the milk. The difference in fresh coconut cream to that of the tin version is that the fresh coconut cream has not been pasteurized and still has its natural oils remaining. When making a curry this is importance as the oil gives the curry an oily surface that is desperately needed. The flavor and the texture are also much higher of that of the tin version. Why not give it a true! Buy a fresh coconut and make your own cream and milk. You will never want the tin version again.
