Comfort food weather! Last night I made a lentil and rice stew out of a baby toddler cookbook but I added a few things. It was even better reheated today! Put 1 cup brown/green lentils in a saucepan with 2.5 cups of water (I used chicken stock), bring to boil then cook til lentils are tender. Add 1/2 cup rice, 1 tsp allspice (I used garam masala), cook til rice cooked. And thats it. But I roasted eggplant, zucchini and carrot, stirred them through and crumbled feta on top. You could do any veggies. My daughter didnt like the feta but ate everything else. And my husband loved it!
